How to Make Turkish Coffee: A Step-by-Step Guide

What you’ll need

To make one cup, you’ll need a cezve (or any small pot), a small coffee cup for measuring, fresh cold water, and one heaped teaspoon of finely ground Turkish coffee per cup. Sugar is optional and added before brewing, not after.

How to make Turkish coffee, step by step

First, measure the water using your coffee cup and pour it into the cezve — one cup of water per serving. Add one heaped teaspoon of Turkish coffee for each cup, along with sugar if you’d like it. At this stage, stir gently to combine.

Next, place the cezve over a low heat. The key to good Turkish coffee is patience — never rush it with high heat. As it warms, a dark foam will begin to form on the surface. Do not stir again from this point.

As the coffee approaches a simmer, the foam will rise. Just before it bubbles up, remove the cezve from the heat. For the best foam, spoon a little into each cup first, then return the pot to the heat briefly and pour the rest slowly.

Finally, let the cup rest for a minute so the grounds settle at the bottom. Sip slowly — and never drink the last bit, where the grounds collect.
